Every dish at El Compadre is built on decades of tradition — hand-made tortillas, slow-fired salsas, and recipes passed down through generations.
Our Story
El Compadre has been a quiet fixture on Washington Street for years — not because we lack ambition, but because we believe the food should speak louder than any sign. Every mole is ground by hand. Every tortilla is pressed to order. We source what we can locally and import the rest with the same care our abuelas would insist upon.
This isn't fusion. This isn't shortcut cuisine. It's the real thing, done the right way, served to a community that deserves nothing less.
What We Do Best
Three pillars define everything on our menu — technique, tradition, and the relentless pursuit of flavor.
Pressed daily from nixtamalized corn. Warm, thin, and fragile the way they should be — never mass-produced, never frozen.
Our mole negro rests for hours, layered with chiles, spices, and chocolate. It's the kind of depth that requires time — and we have it.
Roasted whole, seeded by hand, and blended in small batches. From smoky chipotle to bright tomatillo — every salsa tells a story.
The Experience
Whether it's a Tuesday night dinner for two or a Sunday celebration with the whole family, El Compadre is where Exira comes together. The air smells like cumin and roasting chiles. The music is low. The portions are generous.
